As we go into fall, I must admit – I LOVE everything that has to do with pumpkin pie and apple cider! It signifies fall.
It reminds me of the change of the seasons. Every year, at this time, I’m one of the girls waiting to get the Pumpkin Spice Latte at Starbucks or the huge pumpkin pie at Costco.
If you can’t tell – I’m a foodie trapped in a fitness instructor’s body! I love great food, but I’m always trying to lose weight or even just maintain my weight! I love indulgences, but my body can only take so much.
About a year ago, I found Chia seeds as a great way to fill me up, still lose weight, and be able to indulge in “treats” without all the calories. So, as we go into the fall, I am excited to share my healthy “pumpkin pie recipe”!
In a small glass bowl – mix together:
1 cup pumpkin puree
2 tbsp chia seeds
1 cup coconut milk
1 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 tsp vanilla
1 tsp honey
Store covered in the fridge overnight. This is typically a serving for two. You can always double the recipe and share with your loved ones!
